Simply Rustic Macaroni & Cheese


Macaroni and Cheese is probably the World’s favorite comfort food, and there are as many ways of making it as there are people on the planet. There’s nothing fancy about this recipe, it doesn’t involve creating a roux or cream sauce, or topping with breadcrumbs and baking. This is my family’s favorite Macaroni & Cheese, spanning generations. It’s a simple two-ingredient recipe that requires that you have just a little faith in it.

There's nothing fancy about this simple two-ingredient recipe. There's no roux or cream sauce. It's my family's favorite macaroni & cheese, going back generations. The consistency is what my dad would call 'stringy', as the cheese seems to embed itself into the macaroni.

Ingredients
  1. 1 16 oz. bag of large elbow macaroni.
  2. 3 to 5 lbs medium, mild, sharp, or extra sharp cheddar (I prefer Cache Valley or Tillamook, but any REAL cheese will do), shredded.
Instructions
  1. In a large pot, bring 4 to 6 quarts of water to a rolling boil, add salt to taste.
  2. Add large elbow macaroni to the boiling water.
  3. Return to a boil and boil uncovered, stirring occasionally for 7 minutes.
  4. Drain the macaroni and return to medium heat.
  5. Using a spatula, fold in handfuls of the shredded cheese until desired consistency.
  6. Serve hot.
Notes
  1. I do like to garnish my macaroni & cheese with some diced red onion.
  2. Ketchup is a perfectly acceptable accompaniment (cheese, onions, and tomatoes go together in ANY combination).
